Refreshing summer salad with jicama, lime, raisins, pineapple, coconut, sweet onion, and quinoa.
Ingredients:
  • 2 cups water
  • 1 cup quinoa, rinsed and drained
  • 1 large jicama, peeled and diced
  • 1 cup sweetened shredded coconut
  • 1 cup diced pineapple
  • 0.75 cup golden raisins
  • 0.75 cup diced sweet onion
  • 2 limes, zested and juiced
  • 0.25 cup chopped fresh cilantro
  • 0.5 jalapeno pepper, chopped
Instructions:
  • In a saucepan, bring quinoa with water to a rolling boil. Stir in 1/4 teaspoon salt. Simmer covered on low heat for 15 minutes until all liquid is absorbed. Let sit covered off heat for an additional 5 minutes before serving.
  • Chill quinoa on a platter until completely cool, for at least 15 minutes.
  • Combine jicama, coconut, pineapple, raisins, sweet onion, lime zest, lime juice, cilantro, and jalapeno pepper in a large bowl. Add cooled quinoa and mix well. Season with salt and black pepper to taste.
  • Wrap the bowl with plastic wrap and chill in the refrigerator until the salad is completely cold, around 30 minutes.
