Refreshing jicama and mango salad with zesty cilantro-lime dressing, ideal for both Mexican and Asian dishes.
Ingredients:
  • 1 large firm mango, peeled and cut into matchsticks
  • 1 large jicama, peeled and cut into matchsticks
  • 1 small red bell pepper, cut into matchsticks
  • 0.5 medium red onion, thinly sliced
  • 0.5 cup chopped cilantro leaves
  • 0.25 cup honey
  • 2 medium limes, juiced
  • 0.125 teaspoon cayenne pepper, or more to taste
Instructions:
  • Combine the jicama, bell pepper, mango, and onion in a large bowl for a refreshing salad.
  • Prepare the dressing by combining cilantro, honey, lime juice, salt, and cayenne pepper in a small bowl and stirring until well mixed.
  • Drizzle the dressing over the salad and mix well to ensure every leaf is coated. Chill in the fridge for a minimum of 15 minutes before serving for optimal flavor infusion.
