Elevate your salads with this vibrant recipe that will awaken your taste buds and satisfy your hunger, perfect for picnics or indoor lunches.
Ingredients:
  • 3 navel oranges
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon agave syrup
  • 2 tablespoons avocado oil or extra virgin olive oil
  • 1/2 teaspoon Kosher salt, plus more for finishing
  • Pinch freshly ground pepper
  • 1/4 cup chopped fresh mint, plus more for garnish
  • 1 to 1 1/2 pound jicama, peeled, halved and cut into 1/4 to 1/2-inch sticks
  • 1/4 cup red onion, thinly sliced
  • 1 1/2 cups sliced Campari tomatoes
  • 1 head green leaf lettuce, washed and dried (optional)
  • 2 Hass avocados, sliced or chopped
Instructions:
  • Prepare the oranges: Trim off the top and bottom of each orange. Then, carefully slice off the peel and pith by following the curve of the orange. Separate the segments over a bowl, collecting the juice. Aim for about 1/4 cup of orange juice. Any extra juice is a delicious bonus for you to enjoy.
  • Whisk lime juice, vinegar, agave, and oil into the bowl with 1/4 cup orange juice. Season with salt and pepper, then stir in chopped mint for a burst of fresh flavor.
  • For the salad, blend jicama, red onion, and tomatoes in a spacious bowl. Pour in the dressing and mix well; delicately add the orange segments. Cover and refrigerate the salad until ready to serve, for up to overnight.
  • To serve, place lettuce on a platter, spoon jicama salad on top using a slotted spoon, add avocado slices, garnish with mint leaves, and sprinkle with salt.
  • Transfer any remaining flavorful liquid from the bowl into a serving container for extra dressing. Serve promptly.
