Jim's Apple Raisin Pound Cake with Praline Glaze

Apple and raisin spiced cake with pecans and caramel glaze.
Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground allspice
  • 1 teaspoon salt
  • 1.5 cups vegetable oil
  • 4 eggs
  • 3 cups apples - peeled, cored and shredded
  • 1 cup raisins
  • 0.5 cup light brown sugar
  • 0.5 cup half-and-half cream
  • 0.25 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while you generously grease a 10-inch Bundt pan. Then, in a bowl, combine flour, baking soda, allspice, and 1 teaspoon of salt by whisking them together.
  • Combine vegetable oil, 2 cups of sugar, eggs, apples, 1 cup of pecans, and raisins in a large bowl. Fold in the flour mixture and transfer the batter to the Bundt pan.
  • Bake in the preheated oven for about 70 minutes, or until a toothpick inserted into the center of the cake comes out with moist crumbs. Allow the cake to cool in the pan for 10 minutes before transferring it onto a rack to finish cooling.
  • For the glaze, combine white sugar, brown sugar, half and half, and salt in a saucepan. Boil while stirring until it thickens into a syrup (5 to 10 minutes, reaching 220°F/105°C on a thermometer). Stir in butter, pecans, and vanilla. Cook until it reaches 234°F/110°C. Cool for 5 minutes, then pour over the cake.
