Cheesy onion soda bread: Ideal side for St. Patrick's Day feast.
Ingredients:
  • 4 cups bread flour, plus more for dusting
  • 1.5 teaspoons salt
  • 1 tablespoon baking powder
  • 6 tablespoons butter, softened
  • 1.25 cups buttermilk
  • 2 tablespoons confectioners' sugar
  • 0.75 cup finely chopped onion
  • 0.75 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to 425 degrees F (220 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • In a large mixing bowl, combine bread flour, salt, and baking powder. Add butter, buttermilk, and confectioners' sugar to form a dough; gently fold in the onion and Cheddar cheese. Split dough in half, shape each into a ball, then flatten to 2 inches thick on a baking sheet. Dust loaves with flour before baking.
  • Bake in a preheated oven for 30 minutes until golden brown. Allow to cool on racks briefly before serving warm.
