Versatile seasonal veggie salad with a tangy marinade of vinegar, oil, dry mustard, sugar, and poppy seeds, chilled overnight for maximum flavor.
Ingredients:
1headfresh broccoli, cut into florets
1headcauliflower, broken into small florets
4ounces fresh mushrooms, sliced
1green bell pepper, chopped
3stalkscelery, diced
1onion, finely diced
0.5 cupdistilled white vinegar
2tablespoons poppy seeds
2teaspoons mustard powder
1teaspoonsalt
1.5 cups vegetable oil
Instructions:
Cook the broccoli and cauliflower in a pot of boiling water until they are just tender. Then, drain and rinse them with cold water.
Combine the broccoli, cauliflower, mushrooms, bell pepper, celery, and onion in a large bowl.
Mix together vinegar, poppy seeds, sugar, mustard, salt, and vegetable oil in a medium bowl until fully combined.
Drizzle the flavorful marinade over the colorful vegetables and toss until well combined. Refrigerate overnight for enhanced flavors. Store any leftovers in the fridge.
