Versatile seasonal veggie salad with a tangy marinade of vinegar, oil, dry mustard, sugar, and poppy seeds, chilled overnight for maximum flavor.
Ingredients:
  • 1 head fresh broccoli, cut into florets
  • 1 head cauliflower, broken into small florets
  • 4 ounces fresh mushrooms, sliced
  • 1 green bell pepper, chopped
  • 3 stalks celery, diced
  • 1 onion, finely diced
  • 0.5 cup distilled white vinegar
  • 2 tablespoons poppy seeds
  • 2 teaspoons mustard powder
  • 1 teaspoon salt
  • 1.5 cups vegetable oil
Instructions:
  • Cook the broccoli and cauliflower in a pot of boiling water until they are just tender. Then, drain and rinse them with cold water.
  • Combine the broccoli, cauliflower, mushrooms, bell pepper, celery, and onion in a large bowl.
  • Mix together vinegar, poppy seeds, sugar, mustard, salt, and vegetable oil in a medium bowl until fully combined.
  • Drizzle the flavorful marinade over the colorful vegetables and toss until well combined. Refrigerate overnight for enhanced flavors. Store any leftovers in the fridge.
