Innovative chicken pad Thai with a twist of rich peanut butter elevates classic Thai taste.
Ingredients:
  • 1 pound boneless, skinless chicken breast halves, cut into bite-size pieces
  • salt and ground black pepper to taste
  • 1 teaspoon ground cayenne pepper
  • 3 tablespoons white wine vinegar
  • 6 tablespoons fish sauce
  • 1 tablespoon creamy peanut butter
  • 5 cloves garlic, minced
  • 4 large eggs, lightly beaten
  • 1 (16 ounce) package pad Thai rice noodles
  • 0.5 cup fresh bean sprouts
  • 0.5 cup chopped green onion
Instructions:
  • Heat up a generously sized pot of water until it reaches a rolling boil.
  • Season the chicken with a pinch of salt and freshly ground black pepper, then set aside.
  • Combine sugar, cayenne pepper, white wine vinegar, fish sauce, and peanut butter in a bowl and whisk until smooth.
  • Drizzle olive oil in a large skillet or wok and heat over high flame.
  • Sear chicken in the hot oil until white on the outside but slightly pink inside, around 3 minutes.
  • Place the chicken in a separate bowl and set it aside.
  • Reduce skillet heat to medium-low. Saute garlic until translucent, about 1 to 2 minutes, stirring constantly.
  • Sauté eggs with garlic until gently cooked, about 2 to 3 minutes.
  • Combine the peanut sauce with the garlic and eggs, stirring until well mixed. Simmer the sauce.
  • Add rice noodles to the pot of boiling water and cook for about 5 minutes, until noodles are al dente.
  • Strain the noodles.
  • Add the chicken back to the skillet along with the eggs and sauce. Simmer, stirring occasionally, for 5 to 8 minutes, or until the chicken is fully cooked and the juices run clear.
  • Combine bean sprouts, rice noodles, and beef broth in the skillet and bring to a simmer. Cook until noodles are tender and most of the broth is absorbed, about 10 minutes.
  • Garnish with fresh green onions before serving.
