Easy sweet lemon pound cake; perfect plain or dressed up for any occasion.
Ingredients:
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.33333334326744 cup milk
  • lemon, zested and juiced
  • 1 cup unsalted butter, at room temperature
  • 1.5 cups white sugar
  • 3 eggs
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a loaf pan by greasing and flouring it.
  • Combine flour, baking powder, and salt in one bowl. In a separate bowl, blend together milk, lemon juice, and vanilla extract.
  • Using an electric mixer, whip butter and lemon zest until light and fluffy; this should take about 5 minutes. Mix in sugar until fluffy, being careful not to let the butter get too warm. Gradually beat in eggs one at a time, ensuring each is fully mixed in before adding the next.
  • Alternate adding the flour mixture and milk mixture to the batter, mixing well after each addition. Transfer the batter into the loaf pan.
  • Bake in a preheated oven until the top is golden and a toothpick comes out clean when inserted in the center, approximately 70 minutes. Then, loosen the edges with a table knife, let it cool in the pan for 15 minutes, and finally, flip it onto a wire rack to cool.
