Festive snowman cupcakes for a winter party delight.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1/4 cup green, red and white candy sprinkles
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • Betty Crocker™ blue, green, red and brown gel food colors
  • 48 Betty Crocker™ Candy Shop candy eyeballs
  • 1 candied orange slice or large orange gumdrop, flattened, cut into 24 small triangles
  • 3 teaspoons white candy sprinkles
  • 24 miniature marshmallows
Instructions:
  • Preheat oven to 350°F (or 325°F for dark or nonstick pans) and line 24 muffin cups with paper baking cups. Prepare cake batter according to the box instructions for 24 cupcakes, then gently fold in 1/4 cup of colorful candy sprinkles. Fill each muffin cup two-thirds full with the batter evenly.
  • Bake for 14 to 19 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes, then transfer to a cooling rack. Allow to cool completely for about 30 minutes.
  • Divide 1/4 cup of frosting evenly into 3 bowls. Add blue food coloring to one bowl, green to another, and red to the third. Transfer 1 tablespoon of vanilla frosting to a separate bowl and tint it brown to your liking using food coloring. Spoon the brown frosting into a resealable plastic bag, seal it partially, and keep it aside.
  • Spread 2 teaspoons of the leftover vanilla frosting on each cupcake to cover two-thirds, then add 2 candy eyeballs and 1 orange triangle for the nose. Next, use the brown frosting to pipe a half circle smile under the nose. For the hat, generously spread blue frosting on the cupcake, sprinkle white sprinkles on the edges for the brim, and place a marshmallow on top for the pom pom. Repeat this process with the remaining cupcakes using the colored frostings, following the photo as a reference.
  • Let it sit out uncovered at room temperature.
