Vibrant green frittata bursting with fresh fennel fronds, bold kale, and creamy feta cheese.
Ingredients:
  • 2 teaspoons olive oil
  • 1 cup chopped kale
  • 1/2 cup chopped fennel fronds
  • 4 large eggs, beaten
  • salt and freshly ground black pepper to taste
  • 1 (4 ounce) package feta cheese, crumbled
Instructions:
  • Position an oven rack 6 inches below the broiler and preheat the broiler.
  • In a small ovenproof skillet, warm olive oil over medium heat. Cook kale until wilted, about 3 to 5 minutes. Then, stir in fennel fronds and cook for an additional minute.
  • Season beaten eggs with salt and pepper, pour into the skillet, stir briefly, and let the bottom of the frittata set. Use a spatula to release any sticking edges, then sprinkle crumbled feta cheese on top once the edges begin to set.
  • Broil the frittata in the skillet until fully set with slightly browned edges, for 5 to 10 minutes. Serve hot or at room temperature.
