Whip up a flavorful orange and fennel chicken bake for a simple and delicious winter meal.
Ingredients:
  • 8 RSPCA Approved Chicken Drumsticks
  • 1 medium fennel, cut into wedges
  • 1 orange, cut into wedges
  • 125ml white wine
  • 250ml chicken stock
  • 70g kale leaves, finely chopped
Instructions:
  • Preheat the oven to 180C and make three deep slits in the thickest part of each drumstick using a sharp knife.
  • In a large flameproof baking dish, heat oil over high heat. Cook the chicken in 2 batches, turning occasionally, until golden brown, about 5 minutes. Add fennel, orange, wine, and stock back to the pan with the chicken.
  • Roast until the chicken is fully cooked, then toss in kale for the final 5 minutes.
