Orange and fennel salad recipe

7-ingredient light salad, perfect side dish.
Ingredients:
  • 28.60 gm honey
  • 2 oranges
  • 23.40 gm wholegrain mustard
  • 18.20 gm extra virgin olive oil
  • 120g baby rocket
  • 1 Lebanese cucumber, halved lengthways, seeded, thinly sliced
  • 1 fennel bulb, thinly sliced
Instructions:
  • Peel the oranges and separate them over a large serving bowl to catch the segments (refer to note). Squeeze the membrane over a small bowl to collect 2 tablespoons of juice. Discard the membrane. In the juice, mix in mustard, honey, and oil. Whisk until well combined. Season with salt and pepper to taste.
  • Combine rocket, cucumber, and fennel in a bowl. Drizzle dressing over the salad and toss gently to mix well. Serve and enjoy!
