Spring salad with watercress, fennel, and orange - ideal for pairing with fish or pasta.
Ingredients:
  • 1 bunch watercress
  • 2 oranges
  • 1 fennel bulb, thinly sliced crossways
  • 21.00 gm lemon juice
Instructions:
  • Remove tough stalks from the watercress, wash and pat dry the leaves. Using a sharp knife, peel oranges, removing all the white pith. Separate the segments from the membranes.
  • Combine the watercress, orange segments, and fennel in a bowl. Drizzle with oil, orange juice, and season with salt and pepper. Toss well to combine. Serve the salad immediately.
