Vibrant salad with radicchio, fennel, watercress, pecans, dried cranberries, and balsamic vinaigrette - serves 20.
Ingredients:
  • 0.5 cup chopped dried cranberries
  • 0.25 cup red wine vinegar
  • 0.25 cup balsamic vinegar
  • 1 tablespoon minced garlic
  • 1.25 teaspoons salt
  • 1 cup extra virgin olive oil
  • 6 bunches watercress - rinsed, dried and trimmed
  • 3 bulbs fennel - trimmed, cored and thinly sliced
  • 3 small heads radicchio, cored and chopped
  • 1 cup pecan halves, toasted
Instructions:
  • Combine fresh cranberries, tangy red wine vinegar, rich balsamic vinegar, minced garlic, and a pinch of salt in a bowl. Drizzle in the olive oil while whisking to create a flavorful dressing.
  • Combine watercress, fennel, radicchio, and pecans in a large salad bowl. Pour vinaigrette over the salad, toss well, and serve immediately.
