Elevate your health with omega-packed salmon paired with vibrant fennel, citrus, and olives for a flavorful boost.
Ingredients:
  • 1 large fennel bulb, trimmed, halved, thinly sliced
  • 1 orange, sliced
  • 1 lemon, sliced
  • 1/2 tsp fennel seeds
  • 2 garlic cloves, thinly sliced
  • 6 sprigs fresh dill, plus extra to serve
  • 113.75 gm extra virgin olive oil
  • 4 x 150g skinless boneless salmon fillets
  • 125.00 ml pitted Sicilian olives
  • 500g cream delight potatoes, halved, steamed (see note)
  • Salad leaves, to serve
Instructions:
  • Preheat your oven to 180C (160C fan-forced).
  • In a large roasting pan, combine fennel, orange, lemon, fennel seeds, garlic, dill, and 1/3 cup of oil. Season and toss everything together. Place salmon fillets on top and drizzle with the remaining oil. Season with salt and pepper. Roast for 15 minutes.
  • Place olives in the pan and roast for an additional 10-15 minutes until the salmon is cooked through and the fennel is tender.
  • Plate the delectable salmon mixture alongside tender potatoes and crisp salad leaves.
