Oven-roasted fennel: Buttery, caramelized perfection. Pair with pork, lamb, or salmon.
Ingredients:
  • 2 medium fennel bulbs
  • 3 tablespoons olive oil
  • 3 tablespoons white balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground thyme
  • 0.5 teaspoon ground black pepper
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and prepare a baking sheet with parchment paper.
  • Remove the stalks from the fennel, reserving the green fronds for garnish if desired. Trim the root ends, slice the fennel into 1/4 to 1/3-inch slices, and arrange them on the baking sheet.
  • In a small bowl, combine olive oil, vinegar, garlic, thyme, salt, and pepper. Brush the mixture over the fennel slices.
  • Roast the fennel in the preheated oven for 25 to 30 minutes until soft and caramelized, flipping slices halfway through. Transfer to a serving platter and optionally sprinkle with green fronds for garnish.
