Add Creole seasoning for a spicy kick to this quick, flavorful green and grain side dish ready in 30 minutes.
Ingredients:
  • 1 cup chicken broth
  • 0.5 cup quinoa, rinsed and drained
  • 2 quarts water
  • 1 bunch lacinato (dinosaur) kale, sliced
  • 1 teaspoon olive oil
  • 1 large shallot, minced
  • 0.5 teaspoon Creole seasoning (such as Tony Chachere's®)
Instructions:
  • In a saucepan, bring the chicken broth to a boil, add the quinoa, cover, and simmer over low heat until the quinoa is tender and the liquid is absorbed, approximately 10 minutes.
  • 1. Boil plenty of water in a large saucepan, then briefly cook kale until tender, for 2 to 3 minutes. Drain the kale. Next, in the same saucepan, warm olive oil over medium heat and sauté shallot until softened, which should take about 5 minutes. Incorporate the kale, cooking until it reaches your preferred level of doneness. Stir in quinoa and season the veggie mix to taste with salt and Creole seasoning.
