Kale Orange Salad

Fresh kale salad with fruit, sweet spices, and winning flavors.
Ingredients:
  • 2 oranges
  • 1 tablespoon honey
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon olive oil
  • 1 bunch (8 oz) fresh kale, ribs removed, very thinly sliced (6 cups)
  • 1/2 red onion, thinly sliced (1 cup)
Instructions:
  • Peel the orange down to the flesh with a sharp knife, making sure to remove all the white pith. Cut the segments between the walls of the membrane directly into a bowl. Gently remove the sections and squeeze any juice from the membranes into the bowl.
  • In a large bowl, whisk together honey, vinegar, salt, pepper, ginger, nutmeg, and up to 1/3 cup of reserved orange juice. Slowly pour in oil while whisking. Add kale and toss until well coated. Then, mix in the onion and orange segments until coated. Serve promptly.
