Festive Beet Citrus Salad with Kale and Pistachios

Vibrant Beet and Kale Salad featuring red and golden beets, blood orange slices, kale, and toasted pistachios. Perfect for Paleo and vegan diets.
Ingredients:
  • 6 - 10 large beets (about 4 to 5 pounds), a mix of red, pink, and golden
  • 2 - 3 blood oranges (or cara cara or navel oranges or a mixture)
  • 1 bunch of kale (lacinato or dinosaur kale if available), center ribs removed, leaves thinly sliced
  • 1 cup roasted pistachios, roughly chopped
  • 1/4 cup chopped fresh mint leaves
  • 3 Tbsp chopped Italian parsley
  • Dressing:
  • 2 Tbsp lemon juice
  • 1/2 cup good quality extra virgin olive oil
  • 6 Tbsp seasoned rice vinegar (or unseasoned rice vinegar plus 2 teaspoons of sugar)
  • Zest of one orange
  • Zest of one lemon
  • 2 Tbsp capers, coarsely chopped
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste
Instructions:
  • Prepare the beets: Scrub them clean, leaving the skin on. Boil them separately by color to prevent bleeding. For each batch, place in a pot, cover with water, add salt, and simmer until fork-tender, about 30-60 minutes. Alternatively, wrap in foil and roast in a 400°F oven for 1 to 1 1/2 hours until tender. Let cool, then peel.
  • As the beets cook, get started on the dressing and prep the remaining ingredients. Combine all dressing components in a jar, cover, and shake until fully mixed.
  • Marinate beets in dressing: Cut the beets into 1/2-inch to 1-inch pieces, separate by color, then toss each in a bowl with a third of the dressing. Chill for at least an hour, or up to two days.
  • Massage the sliced kale with half of the remaining dressing in a bowl and let it sit for at least 30 minutes before serving.
  • Serve the salad by either layering the beets, citrus, mint, parsley over the kale, then sprinkle with chopped roasted pistachios and drizzle with the remaining dressing. Alternatively, toss everything together and finish by sprinkling with pistachios. Enjoy the delicious salad and feel free to leave a review below!
