A festive Russian salad with herring, veggies, and vibrant flavors, perfect for any celebration.
Ingredients:
  • 3 whole russet potatoes
  • 2 large carrots, peeled
  • 2 beets, washed with tops and bottoms removed
  • 0.5 yellow onion, chopped
  • 1 (12 ounce) jar herring fillets, packed in oil
  • 6 tablespoons mayonnaise
Instructions:
  • 1. Start by bringing a large pot of water to a boil. Cook potatoes for 15 to 20 minutes, carrots for 25 to 30 minutes, and beets for 40 minutes until just tender. Let them cool before peeling. 2. Peel and discard the skins from the potatoes and beets. Shred the potatoes, carrots, and beets separately.
  • Layer half of the onions and herring fillets at the bottom of a bowl. Top with half of the grated potatoes, followed by half of the carrots and half of the beets. Spread 3 tablespoons of mayonnaise over the salad and season with salt and pepper. Repeat the layers to complete the salad. Cover with plastic wrap and refrigerate for at least 1 hour before serving chilled.
