Delicious Russian potato and beet salad with carrots, dill pickles, green onions, olive oil, and champagne vinegar.
Ingredients:
  • 2 beets
  • 4 small potatoes
  • 2 small carrots
  • 3 small dill pickles, diced
  • 0.25 cup vegetable oil
  • 2 tablespoons champagne vinegar
  • salt to taste
  • 3 green onions, chopped
Instructions:
  • In a large pot of boiling water, cook beets until tender for about 30 minutes. In a separate pot of boiling water, cook potatoes and carrots until tender for about 20 minutes. Drain, cool, and remove skins. Dice the vegetables and transfer to a large bowl.
  • Combine diced pickles with beets, potatoes, and carrots in a bowl. Drizzle with olive oil and vinegar, then toss together to coat. Season with salt, sprinkle with green onions, and chill thoroughly before serving.
