Satisfying kale sauté with white beans and sausage, elevated with garlic and onion for a flavorful twist. Perfect for kale skeptics.
Ingredients:
  • 2 tablespoons extra virgin olive oil
  • 1/2 pound bulk sweet or spicy Italian sausage, or other sausage (use gluten-free sausage if cooking gluten-free)
  • 1 onion, sliced thin (about 1 1/2 cup's worth of sliced onions)
  • 2 large garlic cloves, sliced thin
  • 1 pound kale (1 large bunch), center thick rib removed, leaves roughly chopped
  • 1/2 cup chicken or vegetable stock
  • 1 15-ounce can of white beans, rinsed and drained, or 1 1/2 cups cooked white beans
  • Salt and pepper
  • Splash of vinegar (cider, red wine, or sherry vinegar)
Instructions:
  • Sear the sausage in olive oil over medium heat for 3 to 4 minutes until mostly cooked, then transfer to a bowl using a slotted spoon. If using links, remove the casings before cooking.
  • Caramelize the onions and garlic: Sauté onion slices on high heat until edges turn golden brown, about 3 to 4 minutes. Add garlic and cook for an additional minute. Add the sausage back to the pan with the onions.
  • Add the kale to the pan, sprinkle salt over it, and pour in the chicken stock. Cover the pan, reduce heat to medium, and cook for 2 minutes.
  • Add the beans to the pot after mixing everything well. Cover and simmer on low heat for 5 minutes. Turn off the heat, let it sit for 5 minutes, then finish with a splash of vinegar before serving.
