Ukrainian beef kasha: flavorful, textured casserole with bulgur wheat, veggies, and ground beef, slightly spicy.
Ingredients:
  • 2 stalks celery, chopped
  • 2 green onions, chopped
  • 1 cup diced tomato
  • 2 cups beef broth
  • 1 cup bulgur (cracked wheat), uncooked
  • salt to taste
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • In a skillet over medium-high heat, sauté ground beef until crumbly and nearly cooked. Remove excess grease, then reduce heat to medium and add celery, green onions, and tomato. Cook until celery is tender and beef is browned.
  • While the beef is cooking, bring beef broth to a boil in a saucepan. Add bulgur wheat, cover, and let it simmer on low heat for around 10 minutes until tender. Stir the cooked bulgur wheat into the beef mixture and season with salt and cayenne pepper to taste.
