Spicy Cajun ground turkey and brown rice dish with onions and green peppers - perfect standalone meal or side dish for a Cajun feast.
Ingredients:
  • 1.5 cups water
  • 0.66666668653488 cup uncooked brown rice
  • 0.5 pound ground turkey
  • 0.5 cup chopped green bell pepper
  • 0.33333334326744 cup chopped onion
  • 0.5 teaspoon minced garlic
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon dried celery flakes
  • 1 teaspoon Cajun seasoning
  • 0.25 teaspoon ground black pepper
  • 0.33333334326744 cup water
  • 1 pinch salt, or to taste
Instructions:
  • In a saucepan, bring 1 1/2 cups of water to a boil. Add brown rice, reduce to a simmer, cover, and cook for 40 to 50 minutes until tender and liquid is absorbed. Set aside cooked rice.
  • In a skillet over medium heat, brown ground turkey until it releases fat, about 2 to 3 minutes. Add green bell pepper, onion, and garlic; cook until turkey is crumbly and no longer pink and veggies are tender, about 5 to 8 minutes. Drain any excess grease. Stir in cooked brown rice, garlic powder, celery flakes, Cajun seasoning, black pepper, and 1/3 cup water.
  • Simmer the mixture until the liquid is absorbed, approximately 10 minutes. Season with salt and more black pepper to taste.
