Fire up the grill for easy, flavorful Middle Eastern chicken kebabs, perfect with pita, lemon, and hummus.
Ingredients:
  • 750g chicken thigh fillets, cut into 4cm pieces
  • 2 garlic cloves, finely chopped
  • 40.00 ml lemon rind, finely grated
  • 65.63 gm lemon juice
  • 20.00 ml fresh oregano leaves, chopped
  • 5.00 gm paprika
  • 27.30 gm olive oil
  • 1 large red capsicum, cut into 3cm pieces
  • 1 large red onion, cut into 3cm pieces
  • 4 pita bread rounds
  • Fresh flat-leaf parsley leaves, chopped
  • Lemon wedges
Instructions:
  • Combine chicken, garlic, lemon rind, lemon juice, oregano, paprika, and 1 tablespoon of oil in a glass bowl. Toss well to coat evenly. Cover and chill in the refrigerator for 30 minutes.
  • Skewer chicken, capsicum, and onion alternately. Season generously with salt and pepper.
  • Heat up the barbecue grill on medium-high heat.
  • Grill skewers for 6 to 7 minutes per side until they are beautifully browned and fully cooked.
  • Brush both sides of the pita bread with the remaining oil, then cook for 1 to 2 minutes on each side until golden and heated through. Sprinkle the skewers with parsley before serving with the bread and lemon wedges.
