Exciting Asian-inspired chicken skewers for a fast and delicious family meal.
Ingredients:
  • 2 chicken breast fillets, sliced lengthways into strips
  • Juice of 1 lemon
  • 40.00 ml kecap manis
  • 12.00 gm brown sugar
  • 2 small red chillies, finely chopped
  • 2 cloves garlic, crushed
  • 125.00 ml mint leaves
  • 125.00 ml coriander leaves
  • 125.00 ml Asian basil leaves
  • 20.00 ml kecap manis, extra
Instructions:
  • Combine lemon juice, kecap manis, brown sugar, red chili, and garlic. Marinate chicken strips in the mixture. Refrigerate covered for at least 30 minutes, or until needed.
  • Skewer each chicken strip on bamboo sticks. Preheat a chargrill or barbecue to medium-high heat. Grill the skewers in two batches, turning occasionally, for 6 minutes until caramelized and fully cooked.
  • Combine the mint leaves, coriander leaves, and Asian basil leaves. Serve the skewers over steamed brown rice, garnish with the herb salad, and drizzle with extra kecap manis.
