Lemon and garlic chicken skewers with caramelised pineapple

Impress guests or family with easy and flavorful chili lemon chicken skewers.
Ingredients:
  • 20.00 ml finely grated lemon rind
  • 65.63 gm lemon juice
  • 36.40 gm extra virgin olive oil
  • 10.00 gm sweet paprika
  • 20.80 gm hot chilli sauce
  • 4.80 gm sea salt
  • 1kg chicken thigh fillets
  • 1 small whole pineapple, peeled
  • 45.00 gm brown sugar
  • Lemon wedges, to serve
  • Fresh coriander sprigs, to serve
Instructions:
  • In a glass or ceramic bowl, mix together lemon rind, lemon juice, garlic, oil, paprika, chili sauce, and sea salt. Add halved chicken pieces to the bowl and toss to coat evenly. Cover and refrigerate for at least 4 hours, or ideally overnight.
  • Cut the pineapple in half lengthwise, then into 4 wedges each. Trim the core if necessary, and thread the pineapple onto 8 metal skewers. Generously rub the pineapple with sugar.
  • Skewer the chicken onto 4 metal skewers and generously season with pepper.
  • Preheat a barbecue chargrill or grill plate over medium-high heat. Grill chicken, turning occasionally, for 8 to 10 minutes until golden and fully cooked. Transfer to a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Grill pineapple on high heat, turn occasionally, until tender and caramelized, about 5 minutes.
  • Present the chicken alongside pineapple skewers, lemon wedges, and fresh coriander sprigs.
