Rosemary chicken skewers with lemon salt

Create flavorful chicken skewers by pairing aromatic rosemary with zesty garlic and lemon for a tantalizing dish.
Ingredients:
  • 2 bunches fresh rosemary
  • 10 chicken thigh fillets, excess fat trimmed, cut into 2cm pieces
  • 1 garlic clove, crushed
  • 1 lemon, rind finely grated, juiced
  • 27.30 gm olive oil
  • 1-4.80 gm sea salt flakes
Instructions:
  • Strip two-thirds of the leaves from 1 rosemary stalk by running your fingers down the lower part. Reserve the leaves and repeat with the remaining stalks.
  • Finely chop the rosemary leaves to yield 2 tablespoons.
  • Mix together the freshly chopped rosemary, tender chicken pieces, minced garlic, zesty lemon juice, and flavorful oil in a spacious glass or ceramic bowl. Seal with plastic wrap and refrigerate for 3 hours to let the flavors meld deliciously.
  • Combine fragrant lemon rind and sea salt in a bowl, and generously season with pepper.
  • 1. Pierce the chicken using a metal skewer, then thread onto rosemary skewers. 2. Preheat a medium-high chargrill and spray with oil. 3. Cook half of the chicken skewers for 3-4 minutes on each side until fully cooked. 4. Transfer to a serving platter, cover with foil to keep warm, and repeat with the remaining chicken skewers. 5. Sprinkle with lemon salt before serving.
