Spiced ground beef and potato curry with tomatoes, peas, ginger, and cilantro for a delicious Indian dish.
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 1 extra-large Spanish onion, chopped
  • 2 tablespoons water
  • 2 pounds lean ground beef
  • 4 cloves garlic, minced
  • 2 tablespoons grated fresh ginger root
  • 1 serrano chile pepper, finely chopped
  • 2 teaspoons chopped fresh cilantro
  • 1 tablespoon ground coriander
  • 1.5 teaspoons salt
  • 1.5 teaspoons ground cumin
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground turmeric
  • 3 potatoes, peeled and diced
  • 1 (28 ounce) can diced tomatoes
  • 1 cup frozen green peas
  • 1 teaspoon garam masala
Instructions:
  • In a large saucepan over medium-high heat, sauté the onion in olive oil until soft and slightly caramelized, about 12 minutes. If there are any flavorful browned bits stuck to the pan, add water and stir to incorporate.
  • Combine ground beef, garlic, ginger, serrano chile, and cilantro in the pan. Cook until beef is browned and crumbly, stirring occasionally for 10 to 15 minutes. Lower the heat to medium-low. Mix in coriander, salt, cumin, cayenne pepper, and turmeric. Cook until flavors meld, around 5 minutes. Add potatoes and tomatoes. Cover and simmer until potatoes are tender, about 15 minutes.
  • Add green peas to the mixture and simmer until the sauce thickens slightly and the flavors meld together, which takes 10 to 15 minutes. Finish by sprinkling garam masala on top, covering the dish, and allowing it to rest for 5 minutes before serving.
