Guam-style chicken salad with zesty lemon, fresh coconut, and spicy peppers - a tropical twist on a classic dish.
Ingredients:
  • 1 tablespoon salt
  • 1 (3 pound) whole chicken, cut into pieces
  • 0.5 cup lemon juice
  • 1 cup grated fresh coconut
  • 1 hot chile pepper, minced
Instructions:
  • Season chicken generously with salt, then lay the pieces on a broiler pan. Broil for 10 minutes, flip, and broil for an additional 5 minutes or until chicken is cooked through yet still juicy.
  • Dice the cooked chicken pieces.
  • Combine chicken, lemon juice, coconut, and hot peppers in a medium bowl. Refrigerate for at least one hour before serving.
