Buttermilk biscuit-topped berry cobbler.
Ingredients:
  • 6 cups fresh blackberries
  • 2 teaspoons lemon juice
  • 1 cup white sugar
  • 2 teaspoons cornstarch
  • 0.25 cup cold butter, cubed
  • 4 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon salt
  • 1 tablespoon baking powder
  • 2 teaspoons baking soda
  • 1 cup chilled butter, diced
  • 1.3333333730698 cups buttermilk, plus additional for brushing
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously butter a 9x13-inch baking dish.
  • In a mixing bowl, combine blackberries with lemon juice, 1 cup sugar, and cornstarch. Ensure an even coating. Transfer mixture to a baking dish and top with butter cubes. In a separate bowl, mix flour, 1/4 cup sugar, cinnamon, salt, baking powder, and baking soda. Cut in 1 cup diced chilled butter until pea-sized. Add buttermilk, stirring to form batter. Spread batter over blackberries, brush with more buttermilk, and sprinkle with remaining 1/4 cup sugar.
  • Place in the preheated oven and bake until the fruit is tender and the biscuit top is golden brown, approximately 25 minutes.
