Kerryann’s homemade fish fingers & minty smashed peas

Try making homemade fish fingers - simple and rewarding.
Ingredients:
  • 450 g frozen white fish fillets
  • 500 g frozen peas
  • 5 tablespoons plain flour
  • 1 tablespoon smoked paprika
  • ½ an unwaxed lemon
  • 3 slices of wholemeal bread (100g)
  • sunflower oil
  • ½ a bunch of fresh mint (15g)
Instructions:
  • Begin by thawing the fish fillets overnight in the fridge (I suggest cod or haddock, but any white fish will do). Defrost the peas by rinsing them with boiling water in a colander, then drain. Combine flour, paprika, salt, pepper, and lemon zest in a shallow bowl. Beat the eggs in another bowl. Crush the bread into breadcrumbs in a food processor and transfer to a plate. Slice defrosted fillets into thin strips, coat them in the flour mixture, dip in eggs, and then coat with breadcrumbs. Heat oil in a non-stick pan and fry the fish fingers until golden and crispy on both sides. Drain on paper towels. Mash the peas with mint, lemon juice, and seasoning to make a chunky purée. Serve with the fish fingers and a green salad, and a dollop of ketchup if desired.
