Indulge in guilt-free coconut almond cookies perfect for low-carb or keto diets.
Ingredients:
  • 0.75 cup granular sucralose sweetener (such as Splenda®)
  • 0.5 cup butter
  • 3 eggs
  • 0.5 tablespoon heavy cream
  • 1 teaspoon almond milk
  • 0.5 cup unsweetened coconut flakes
  • 6 tablespoons coconut flour
  • 0.25 cup almond flour
  • 1 teaspoon baking powder
Instructions:
  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream together sweetener and butter until smooth in a bowl. Mix in eggs, heavy cream, and almond milk until well combined. Use a spatula to scrape down the sides of the bowl.
  • Combine coconut flakes, coconut flour, almond flour, baking powder, baking soda, and salt in a separate bowl. Blend into the butter mixture until a dough forms.
  • Spoon cookie dough onto the baking sheets in teaspoon-sized portions.
  • Bake in the preheated oven for about 17 minutes until golden brown. Let it cool on the baking sheet for 3 minutes before moving to a wire rack.
