Elevate your stuffed chicken with a gourmet ketogenic pesto for a fancy meal that will wow your guests!
Ingredients:
  • 1.5 cups basil leaves
  • 0.33333334326744 cup olive oil
  • 2 tablespoons pine nuts
  • 2 cloves garlic, roughly chopped
  • 0.5 lemon, zested and juiced
  • salt and freshly ground black pepper to taste
  • 0.5 head cauliflower, broken into florets
  • 1 tablespoon garlic powder
  • 1 pinch cayenne pepper
  • 2 chicken breasts
  • 3 tablespoons coconut oil
Instructions:
  • In a blender, blend basil, olive oil, pine nuts, garlic, lemon zest, lemon juice, salt, and pepper until smooth. Refrigerate pesto until ready to use.
  • Preheat the oven to 350°F (175°C) to get it nice and toasty for your recipe.
  • Steam cauliflower until tender over boiling water, then blend with 2 tablespoons of pesto in a blender.
  • Combine garlic powder, cayenne, salt, and pepper in a small bowl. Massage the spice blend evenly onto the chicken breasts on a work surface.
  • Create an incision on the side of each breast to form a pocket for stuffing. In a skillet over medium heat, warm coconut oil. Brown chicken on both sides until slightly golden, approximately 5 minutes total.
  • Let the chicken rest on the work surface until it's cool enough to handle. Fill each breast pocket with the pesto-cauliflower mixture and transfer them to a rimmed baking tray.
  • Roast in the preheated oven until the chicken is cooked through and the juices run clear, approximately 20 minutes. Use an instant-read thermometer to ensure the center reaches at least 165 degrees F (74 degrees C).
