Keto chicken Cordon Bleu meatballs: Ham-stuffed, topped with creamy Swiss cheese sauce. Simply delicious!
Ingredients:
  • 1 pound ground chicken
  • 0.33333334326744 cup blanched almond flour
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 1 egg, lightly beaten
  • 6 ounces ham steak, cubed into 20 even pieces
  • 1 tablespoon butter
  • 0.75 cup chicken broth
  • 1 teaspoon Dijon mustard
  • 0.5 cup heavy cream
  • 1 cup shredded Swiss cheese
  • 1 pinch cracked black pepper to taste
  • 2 tablespoons minced fresh parsley
Instructions:
  • Mix together chicken, almond flour, salt, garlic powder, onion powder, and egg until well combined. Shape small portions of the chicken mixture around a cube of ham to form 1 1/2-inch meatballs. Place all 20 meatballs on a plate.
  • In a large skillet, heat olive oil over medium-high heat until shimmering. Sear meatballs for 3 minutes on one side, then flip and cook for another 3 to 4 minutes until golden brown. Transfer meatballs to a clean plate.
  • Place the skillet back on medium heat and melt the butter. Stir in the chicken broth and Dijon mustard, then bring to a simmer for 3 to 4 minutes. Add the heavy cream and stir until the sauce begins to simmer. Gradually incorporate the Swiss cheese until fully melted. Add the meatballs back to the skillet and simmer until the sauce slightly thickens, about 3 to 4 minutes. Season with cracked black pepper and parsley. Serve right away, knowing that the sauce will thicken more as it cools.
