Keto-friendly twist on chicken cordon bleu - effortless and bursting with flavor.
Ingredients:
  • 1 pound chicken cutlets, pounded to 1/4-inch thickness
  • salt and freshly ground black pepper to taste
  • 2 large eggs
  • 1 teaspoon Dijon mustard
  • 0.66666668653488 cup almond flour
  • 0.33333334326744 cup freshly grated Parmesan cheese
  • 0.5 teaspoon garlic powder
  • 0.25 cup avocado oil
  • 0.25 pound shaved deli ham
  • 1 cup shredded Swiss cheese
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfectly cooked dish.
  • Season chicken cutlets generously with a sprinkle of salt and pepper, then let them rest.
  • In a shallow bowl, whisk together eggs and Dijon mustard. In another shallow bowl, combine almond flour, Parmesan cheese, and garlic powder. Dip chicken cutlets into the egg mixture, allowing any extra to drip off. Coat with almond flour mixture, then place on a plate.
  • In a large skillet over medium-high heat, golden brown chicken cutlets for 3 to 4 minutes. Flip and cook for an additional 3 to 4 minutes until fully cooked through and juices run clear.
  • Lay chicken cutlets on a baking sheet, then layer with savory ham slices and blanket with Swiss cheese.
  • Simply bake in the preheated oven until the cheese is gooey and bubbly, for 4 to 5 minutes. Serve right away.
