Keto zucchini slice - a low-carb twist on a classic favorite.
Ingredients:
  • 60g Salted Butter, melted
  • 18.20 gm olive oil
  • 250g middle bacon, rind removed, chopped
  • 2 brown onions, thinly sliced
  • 12 Free Range Eggs
  • 250ml (1 cup) pouring cream
  • 100g (1 cup) almond meal
  • 500g zucchini, coarsely grated
  • 125.00 ml chopped fresh basil, plus fresh whole leaves to serve
  • 80g (1 cup) coarsely grated vintage cheddar cheese (see note)
  • 250g smooth ricotta cheese
Instructions:
  • Preheat the oven to 200C/180C fan-forced. Grease a 5cm-deep, 20 x 30cm baking dish with 1 tablespoon of butter.
  • In a large frying pan over high heat, heat the oil until shimmering. Cook the bacon and onion, stirring occasionally, for about 5 minutes until they turn a delicious golden brown.
  • Whisk together eggs and cream until smooth. Fold in bacon mixture, almond meal, zucchini, basil, grated cheese, and remaining butter. Season with salt and pepper. Transfer the mixture to the prepared pan. Spoon ricotta on top. Bake for 45-50 minutes until set and golden brown.
  • Slice into rectangles and enjoy either warm or cold.
