Delicious kheer made with coconut milk, raisins, cardamom, pistachios, and almonds. Serves four.
Ingredients:
  • 2 cups coconut milk
  • 2 cups milk
  • 0.5 cup basmati rice
  • 0.25 cup raisins
  • 0.5 teaspoon ground cardamom
  • 0.5 teaspoon rose water
  • 0.25 cup sliced almonds, toasted
  • 0.25 cup chopped pistachio nuts
Instructions:
  • In a large saucepan over medium heat, bring coconut milk, milk, and sugar to a boil. Stir in rice, reduce heat to low, and simmer until rice is tender and mixture thickens, about 20 minutes.
  • Combine the raisins, fragrant cardamom, and delicate rose water, then simmer briefly. Serve in bowls and top with crunchy almonds and pistachios for a delightful finish.
