Kid-friendly meatballs cooked in a creamy tomato and chicken soup sauce.
Ingredients:
  • 1 tablespoon butter
  • 1 cup chopped green bell pepper
  • 1 cup chopped onion
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 (10.5 ounce) can condensed chicken and rice soup
  • 0.5 cup water
  • 1 pound ground beef
  • 1 egg
  • 0.125 cup milk
  • 2 slices bread
Instructions:
  • In a large saucepan over medium heat, melt butter until sizzling. Add green pepper and onion, sauté for 5 minutes until tender. Pour in tomato soup, chicken & rice soup, and water, bring to a boil. Reduce heat to low and let simmer.
  • In another bowl, mix ground beef, egg, and milk. Add small pieces of bread and blend thoroughly. (Note: Kids enjoy using their hands for this step. Just make sure they wash them thoroughly before and after to prevent contamination.)
  • Form the meat mixture into meatballs and gently place them into the soup. Let it simmer on low heat, uncovered, for 45 to 60 minutes. Stir occasionally, ensuring the meatballs stay intact.
