Kids' favorite: Meatball tortilla wraps.
Ingredients:
  • 20 pork & veal meatballs
  • 8 flour tortillas
  • 260g (1 cup) hummus
  • 8 large butter lettuce leaves
  • 190g (1 cup) bought tabouli
  • 1 large avocado, halved, stone removed, peeled, thinly sliced
  • 60ml (1/4 cup) barbecue sauce
Instructions:
  • 1. Preheat the oven to 180C and line a baking tray with non-stick baking paper. 2. Arrange the meatballs on the prepared tray and cover with foil. Bake for 15 minutes or until heated through. 3. Wrap the tortillas in foil and place them in the oven for the last 5 minutes of cooking, or until heated through.
  • Spread a generous layer of hummus on the tortillas and arrange the lettuce on top. Fill the center of the tortillas with tabouli and top with slices of creamy avocado. Place 2 1/2 savory meatballs on each tortilla.
  • Drizzle the meatballs generously with flavorful barbecue sauce, then tightly roll them up to seal in the delicious filling. Spread the wraps across individual serving plates and enjoy right away.
