Hidden veggie cannelloni: A crowd-pleasing dish for all ages!
Ingredients:
  • Olive oil spray
  • 1 onion
  • 2 small zucchini, chopped
  • 2 small carrots, peeled, chopped
  • 500g lean beef mince
  • 1 egg, lightly whisked
  • 1 x 250g pkt cannelloni
  • 1 x 500g btl bought tomato pasta sauce
  • 125ml (1/2 cup) light thickened cream
  • 100g (1 cup) coarsely grated mozzarella
Instructions:
  • Preheat your oven to 180°C and generously coat a 25 x 30cm baking dish with oil.
  • Finely chop the onion, zucchini, and carrot in a food processor. Transfer to a bowl and combine with the mince and egg. Season with salt and pepper, then mix thoroughly using clean hands. Stuff the mixture into cannelloni tubes and arrange in a single layer in a baking dish.
  • Evenly spread pasta sauce over the cannelloni, then pour over the cream. Top with mozzarella and bake for 40 minutes or until golden.
