King cake cupcakes: all the delicious flavors and vibrant colors of the classic cake, no need to wait for dough to rise.
Ingredients:
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.75 cup white sugar
  • 0.25 cup butter, softened
  • 2 tablespoons white sugar
  • 1 teaspoon vanilla bean paste
  • 2 egg whites
  • 0.66666668653488 cup buttermilk
  • 0.5 (8 ounce) package cream cheese, softened
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 2.75 cups powdered sugar, or more as needed
  • Gold luster dust and green and purple sanding sugars
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin pan by lining it with paper cup liners.
  • In a large bowl, mix flour, baking powder, nutmeg, baking soda, and salt. In another large bowl, use an electric mixer to beat together 3/4 cup plus 2 tablespoons sugar, butter, and vanilla until well combined. Add egg whites one at a time, beating well after each. Gradually mix in half of the flour mixture, then all the buttermilk, and finally the remaining flour mixture, beating until just combined after each addition.
  • Fill each muffin cup with batter until it is about 3/4 full, then use the back of a spoon to smooth the tops.
  • Bake in the preheated oven for 15 to 20 minutes or until a toothpick comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a wire rack and cool completely for about 30 minutes.
  • Prepare the frosting by combining cream cheese, butter, lemon juice, and lemon zest in a medium bowl. Use an electric mixer to blend until light and fluffy. Gradually add powdered sugar and beat until the frosting reaches a spreadable consistency.
  • Frost the cooled cupcakes generously and top with luster dust and sanding sugars for a dazzling finish.
