Make crowd-pleasing cupcakes using Betty Crocker™ Super Moist™ cake mix.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ yellow cake mix
  • 10 oz cream cheese, softened
  • 2 1/2 cups powdered sugar
  • 1/3 cup butter or margarine, softened
  • 3 tablespoons half-and-half
  • 1/4 teaspoon almond extract
  • Purple, green and yellow coarse sparkling sugar
Instructions:
  • - Preheat the oven to 350°F (or 325°F for dark or nonstick pans). Line 24 regular-sized muffin cups with paper baking cups. - Prepare the cake mix according to the instructions on the box, using water, oil, and eggs. - Divide the batter evenly among the prepared muffin cups. - Bake and cool the cupcakes according to the directions on the box.
  • In a medium bowl, combine 6 oz of cream cheese and 3/4 cup of powdered sugar until smooth. Transfer the mixture into a decorating bag with a 1/2-inch round tip. Insert the tip into the top of each cupcake, squeeze a small amount of the mixture into each cupcake's center, and then smooth the top.
  • In a large bowl, combine 4 oz cream cheese, 1/3 cup butter, 1 3/4 cups powdered sugar, half-and-half, and almond extract. Use an electric mixer on medium speed until smooth. Add more half-and-half, if needed, 1 teaspoon at a time. Frost cupcakes and sprinkle with bands of purple, green, and yellow sugar. Store covered in the refrigerator.
