Enhance the bold flavor of Kingfish with zesty salsa. Remove dark meat before cooking for optimal taste.
Ingredients:
  • 1 pound king mackerel fillets - cleaned, washed and cubed
  • 0.5 cup Italian-style salad dressing
  • 0.25 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 (16 ounce) jar salsa
  • 8 (8 inch) flour tortillas
  • 8 ounces shredded Cheddar cheese
Instructions:
  • Marinate fish cubes in zesty Italian dressing for a minimum of 30 minutes. Coat them in flour and set aside to enhance their crispiness.
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking pan.
  • Heat olive oil in a non-stick pan over medium-high heat. Sauté onions and green pepper until soft, then add fish cubes and cook until soft, about 5 minutes. Stir in half of the salsa and take the pan off the heat.
  • Fill tortillas with the mixture, roll them up, and lay them seam-side down in the baking pan. Top the enchiladas with the rest of the salsa and sprinkle generously with shredded cheese.
  • Place in a perfectly preheated oven and bake for 15 minutes.
