Elevate your weekday meals with a simple and creative fish dish using pantry items and fresh ingredients.
Ingredients:
  • 4 x 220g pieces kingfish, pin-boned, skin on
  • 80ml (1/3 cup) olive oil
  • 60g butter
  • Grilled pita bread (optional), to serve
  • 1 clove garlic, crushed
  • 3 oranges (1 zested and juiced, 2 cut into segments)
  • 57.20 gm honey
  • 60ml (1/4 cup) olive oil
  • 2 x 400g cans cannellini beans, rinsed, drained
  • 230g (1 cup) fresh dates, halved, pitted
  • 125.00 ml loosely packed basil leaves
  • 125.00 ml loosely packed flat-leaf parsley
Instructions:
  • Combine garlic, orange zest, orange juice, honey, oil, salt, and pepper in a bowl, whisk together to make a delicious salad dressing. Recipe makes 125ml (1/2 cup).
  • Halve fish pieces lengthwise using a sharp knife. In a large frying pan over high heat, heat 2 tablespoons oil and 30g butter. Place fish in the pan cut-side down and cook for 1 minute until golden. Flip over and cook for another minute until golden and cooked through. Transfer to a plate and repeat with the remaining oil, butter, and fish. Allow to rest for 5 minutes before serving.
  • Prepare the salad by combining orange segments, beans, dates, and herbs in a large bowl. Drizzle three-quarters of the dressing, season to taste, and toss everything until well combined.
  • Plate the fish and salad, followed by a delightful drizzle of the remaining dressing over the salad. Accompany with grilled pita bread, if desired.
