Winter ceviche of kingfish and salmon

Marinate fresh fish in lime and orange juice to lightly 'cook' it. Serve with herbs and spices for a simple and fresh dish.
Ingredients:
  • 60ml orange juice
  • 42.00 gm lime juice
  • 2 tsp sesame oil
  • 24.40 gm fish sauce
  • 300g sashimi-grade (see note) kingfish fillet, thinly sliced
  • 300g salmon fillet, thinly sliced
  • 1 long red chilli, seeds removed, finely chopped
  • 20.00 ml roughly torn coriander leaves
  • 20.00 ml small mint leaves
  • 1 small red onion, very thinly sliced
  • 40.00 ml pomegranate seeds (optional, or use 1 orange or pink grapefruit segment, broken into small pieces)
Instructions:
  • In a bowl, combine orange juice, lime juice, oils, and fish sauce. Place kingfish and salmon slices on 6 serving plates in alternating layers. Top with chopped chilli, coriander, mint, onion, and pomegranate or citrus. Just before serving, drizzle the dressing over the plates.
