Indulgent and rich chocolate cake.
Ingredients:
  • 400.00g good-quality dark chocolate, chopped
  • 100g butter, chopped
  • 100g caster sugar
  • 100ml milk
  • 2 tsp ground instant coffee
  • 20.00 ml rum
  • 4 eggs, beaten
  • 200g self-raising flour
  • 40g butter, chopped
Instructions:
  • Preheat your oven to 180°C and line a 20cm round cake pan with non-stick baking paper. In a saucepan, combine the chocolate, butter, sugar, and milk. Stir over low heat until smooth.
  • Pour the mixture into a spacious bowl, blend in the instant coffee and rum, then allow it to cool.
  • Combine the eggs and flour until fully mixed. Transfer the batter into the pan and bake for 50 minutes, or until a toothpick inserted comes out clean. Allow it to cool completely before serving.
  • Melt the chocolate and butter together in a heatproof bowl set over simmering water until silky smooth.
  • Slice the cake horizontally into two layers. Spread a layer of icing between the cakes, then stack them. Coat the entire cake with the remaining icing.
