Kir royale jelly

Magical liqueur-infused jelly to delight all taste buds.
Ingredients:
  • 5 titanium-strength gelatine leaves (see note)
  • 750ml bottle sparkling white wine
  • 150ml berry liqueur (such as Chambord or creme de cassis)
  • 150g caster sugar
Instructions:
  • Chill six wine glasses or wide Champagne flutes in the freezer for 15 minutes.
  • Place the gelatine leaves in a small bowl of cold water and let them soften for 5 minutes.
  • In a pan over medium heat, combine 150ml of sparkling wine with sugar and berry liqueur. Cook gently, stirring, until the sugar dissolves. Remove from heat.
  • Squeeze out water from the gelatine leaves. Add the leaves to a pan and whisk until dissolved. Pour mixture into chilled glasses. Pour remaining sparkling wine into a jug, let foam settle, then pour into glasses. Chill glasses in the freezer for 15 minutes, then refrigerate overnight until set and bubbly.
