Kiwi passionfruit pavlova

Passionfruit elevates Pavlova with zesty flair!
Ingredients:
  • 6 eggwhites
  • 322.50 gm caster sugar
  • 10.00 gm cornflour
  • 1 tsp white vinegar
  • 4.40 gm vanilla extract
  • 300ml thickened cream
  • 12.00 gm icing sugar mixture
  • 4 kiwifruit, peeled, sliced
  • 2 passionfruit, halved
Instructions:
  • Preheat your oven to 120°C (100°C fan-forced). Line a baking tray with parchment paper and draw a 22cm circle on it.
  • 1. Beat egg whites with an electric mixer until stiff peaks form. 2. Gradually add caster sugar and beat for 10 minutes until sugar dissolves. 3. Mix in cornflour, vinegar, and vanilla and beat for 1 minute. 4. Spoon mixture onto a prepared circle and use a palette knife to shape into a high-sided circle, creating furrows along the sides.
  • Bake for 1 hour and 15 minutes or until set. Let it cool completely in the oven with the door cracked open.
  • With an electric mixer, whip cream and icing sugar until soft peaks form. Place the pavlova on a plate and spread it with the cream mixture. Top it with fresh kiwifruit and passionfruit pulp, then serve.
