Kofte with carrot and mint couscous

Travel the world with 6 ingredients in this delicious lamb kofte dish!
Ingredients:
  • 250.00 ml small fresh mint leaves
  • 500g lamb mince
  • 1 medium brown onion, finely chopped
  • 2 tsp ras el hanout or Morrocan seasoning
  • 56.88 gm olive oil
  • 2 medium carrots, peeled, cut into 5mm pieces
  • 200g packet lemon, mint and parsley couscous
  • 312.50 gm boiling water
Instructions:
  • Chop 1/2 cup mint leaves finely and put them in a large bowl. Combine the mint with the mince, onion, and Moroccan seasoning. Season the mixture with salt and pepper, and mix thoroughly. Shape 1/3 cup of the mince mixture into a thick sausage shape and thread it onto a skewer, pressing firmly. Repeat with the rest of the mixture and skewers. Arrange the skewers on a large baking tray, cover, and refrigerate for 30 minutes.
  • Heat 2 tablespoons of oil in a non-stick frying pan over medium-low heat. Sauté the carrot until tender and golden, about 15 to 20 minutes. Remove from heat. In a heatproof bowl, pour boiling water over couscous, cover, and let it stand for 5 minutes. Fluff the couscous with a fork and mix in the cooked carrot, remaining mint leaves, and olive oil. Season to taste.
  • Preheat a greased chargrill pan over medium heat. Grill lamb for 10 to 12 minutes, flipping occasionally, until it's just cooked through. Serve with couscous.
